“Travel Often, Eat Well” – Tortilla Española!


Thats one of THE travel.. and well.. food quotes! But what about eating well while traveling? That's the perfect match :) spanish-omeletteTo continue with quotes: "When in Rome, do as the Romans do", well, we are in Spain so eat as the Spanish do and try this delicious Tortilla Española, which is a Spanish Omelet and the most commonly served dish in Spain. You can eat it for breakfast, on a sandwich, for lunch, for dinner - basically anytime, anywhere. And you also get it in most of the bars in Barcelona, for example in the Bars in El Borne and the Barrio Gotico.

Here is one of the best recipes we have tried so far :)

You will need 125 ml olive oil, 4 large waxy potatoes (peeled and finely sliced), 1 sliced onion, 4 lightly beaten eggs, salt and pepper and a little bit of  parsley

Soooo, step number one:

You heat some of the olive in a skillet of more or less 20 cm and add some of the potato slices so that you cover the skillet. Now you add some of the onions, a bit of salt and some drops of olive oil and go on with the layers -  potatoes, onions, salt, drizzle of olive oil, potatoes, onions, salt, olive oil.  Cook this over medium heat and turn the mixture once in a while. The potatoes should be tender but not browned, which takes normally around 15 mins.

Next step:

Drain the potatoes and onions in a colander and save the olive oil to use for cooking the rest of the omelette. The potato mix needs to cool down now for a bit and then you put it in a bowl with the beaten eggs. Let the egg, potatoes, onions mixture rest for 10 mins more and put some salt and pepper.

Step number 3

tortilla-2When the mixture begins to brown, you start flipping the tortilla by preferably using a plate - add 2 table spoons oil to the skillet and flip it 3-4 times, cooking it briefly on each side. When it's done, you put the tortilla on a plate,drain the excess oil with some kitchen paper and sprinkle your master piece with some parsley.
